POMEGRANATE CHIA SEED PUDDING

Ingredients

  • 2/3 cup pomegranate juice
  • 1/2 cup light coconut milk
  • 1/4 cup chia seeds
  • 1/3 cup non-fat plain Greek yogurt
  • 1 tablespoon honey
  • 2 kiwis peeled & chopped
  • 1/3 cup pomegranate seeds

Instructions

  1. Mix the first five ingredients in a small bowl. Cover and refrigerate for at least 4 hours. Enjoy chilled topped with the fresh fruit.
