GROUND BEEF TOTCHOS

INGREDIENTS

  • 1 (32 ounce) bag tater tots
  • 1 teaspoon olive oil
  • 1 pound ground beef
  • 1 (1 ounce) package taco seasoning
  • 2 cups shredded cheddar cheese
  • salsa, for serving
  • shredded lettuce, for serving
  • pickled jalapenos, for serving

INSTRUCTIONS

  1. Preheat oven to 425F. Line a baking sheet with parchment paper. Place tater tots in a single layer. Bake 28 – 30 minutes, until golden brown and crispy.
  2. While tater tots are baking, heat olive oil over medium-high heat. Add ground beef and cook, breaking up the beef, until no pink remains.
  3. Add taco seasoning and ΒΌ cup water to the skillet and let simmer, stirring, until all the liquid is absorbed.
  4. Once tater tots are baked, top with ground beef and shredded cheddar cheese.
  5. Return baking sheet to oven and back another 5 minutes or so, until the cheese is melted.
  6. Remove from oven and add toppings. Serve immediately.
