• 1-2 oz coconut rum or 1 oz coconut rum and 1 oz cream of coconut
  • 1 oz blue curaçao
  • 2 oz pineapple juice
  • Crushed ice
  • Pineapple slices
  • Maraschino Cherries


  1. Place coconut rum (and cream of coconut if using), blue curaçao and pineapple juice in cocktail shaker.
  2. Shake until everything is combined.
  3. Add crusted ice to glass and pour mixture over top.
  4. Top with pineapple slices and cherries if desired.


  1. If you have access to cream of coconut then you can use it in this recipe as 1 oz combined with the remaining ingredients, it will add more a sweet coconut flavor.
  2. We love crushed ice, but you can use just regular or pebble ice if you have it.
  3. If you can’t find Blue Curacao then you can use Triple Sec in a pinch.
  4. This makes one drink, but you can easily double or triple for more.
